How important is food and wine matching? Let's face it, it's challenging enough to decide what to eat for dinner, never mind what to drink with it. But that said, it's well worth trying to match your meal with wine - after all, food and wine are destined to be together. In Europe, wines have evolved alongside the local cuisine for hundreds of years, so in areas where seafood is the staple diet, you can pretty much guarantee there will be a perfectly matching local wine.

Much like human relationships, different things can happen when food and wine get together. At worst there may be a clash, or the powerful character of one may prove a bit much for the other. But with a bit of luck, you'll find a match made in heaven. When the two get together there are fireworks - they bring each other to life, teasing out every last element of flavour.
